Cut off both ends of the watermelon so it can stand upright on a flat surface.
Using a sharp knife, carefully trim away the rind from around the sides, following the curve of the fruit.
Trim the top and bottom flat if a more traditional cake height is desired.
In a chilled bowl, whip the cold heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Place the watermelon cake on a serving platter and spread the whipped cream over the top (and partway down the sides, if desired).
Arrange fresh berries on top, then finish with almonds, pistachios, or mint leaves.
Serve immediately, or refrigerate for up to 1 hour before serving.
