  • 4 large eggs room temperature
  • 1 cup buttermilk room temperature
  • 2 tsp vanilla extract

  • 1 cup unsalted butter softened
  • 3/4 cup Biscoff cookie butter room temperature
  • 4 cups powdered sugar sifted
  • 3 to 4 tbsp heavy cream
  • 1 pinch salt

Method
 

  1. Preheat oven to 350 degrees F. Grease and flour three cake pans and line the bottoms with parchment rounds.

  3. In a stand mixer, beat the butter, oil, and sugar on medium speed for 3 minutes until light and fluffy.

  4. With the mixer on low, add the slightly warmed cookie butter in two additions, mixing just until incorporated.

  5. Add eggs one at a time, mixing until just combined after each.

  6. Mix in the vanilla extract.

  7. With the mixer on low, add the flour mixture in three additions, alternating with the buttermilk in two additions, starting and ending with flour.

  8. Divide the batter among the three pans and bake for 25 to 29 minutes, until a toothpick comes out clean.

  9. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.

  10. Beat the butter and cookie butter together for 2 minutes until smooth. Add powdered sugar one cup at a time, alternating with the heavy cream. Add salt, then beat on high for 2 minutes until fluffy.

  11. Frost between each layer, apply a thin crumb coat, refrigerate for 20 minutes, then apply the final coat of frosting and top with crushed Biscoff cookies.
